I made split pea and ham soup yesterday in my new crockpot and it was awesome.

  1. 16 oz. dry split peas
  2. 1.5 lb boneless ham, 1/2-3/4″ cubes
  3. 3/4 lb baby carrots, cut in half
  4. 4-6 stalks celery
  5. 4-6 red russet potatoes, 1/2-3/4″ cubes
  6. 1/2 cup chopped fresh parsley
  7. 1/4 - 1/4 of a large purple onion
  8. 1-2 clove worth fresh garlic
  9. sea salt and fresh ground pepper

Rinse the peas, i just did it in a thing of cold water, scooping out floating pieces of dried plant material. Add everything to the crockpot starting with the peas.

I stirred in the beginning even though supposedly you are not supposed to.

Cook on high for 5-6 hours

I stirred again because the peas had turned the mush and it thickened the soup up.

Serve with toasted tortillas

1 whole wheat tortilla
spray with olive oil
sprinkle with garlic, salt and pepper
spray with olive oil again

Slice with pizza cutter in half, then slice each half into 1″ wide strips. Toast till golden brown and serve with the soup.
