Don’t Mess With Our Chocolate
Food standards ensure that consumers get what they expect when they purchase certain food products. These food standards prescribe minimum amounts of certain ingredients, Food standards are used to ensure that products sold under particular names have the characteristics expected by consumers.
Simply put, the FDA sets the rules that manufacturers need to follow. The manufacturers are asking the FDA to relax the ingredient specifications permitting less expensive vegetable fats and to allow 100% substitution of these fats for cocoa butter and still call it chocolate.
granted, Hershey and the like haven’t been “great” chocolate for a long time, but this is really pushing the limits of faking it.
