Stromboli
I am making dough for Stromboli right now, using a modified version of Kevin’s recipe:
- 1 cup hot water
- 1tsp of yeast
- 1tlb of sugar / honey / molasses
- 1tsp salt
- 1tsp olive oil
Let sit until a foam develops on top (from the activated yeast)
Mix in
- 1/4 cup gluten
- 1 3/4 cups white whole wheat flour
EDIT: I needed more like 2 3/4 cups flour to get the dough right
Let rise for 5 minutes
knead for 5 minutes, adding herbs as you wish (thyme, rosemary, oregano)
let rise for 15-25 minutes more
viola - DOUGH!
Flatten the dough out on a rectangular baking sheet that has been lightly greased
in center of dough rectangle, place
- 1/3 lb sliced ham (try to buy a nice, dryish ham)
- 1/3 lb slicked turkey (same with the ham, go for a higher quality dry turkey)
- 1/3 lb pepperoni
- sliced onion / peppers if you wish
- 1/3 lb jalapeño cayenne / pepper jack cheese
- 1/4 lb mozzarella
- herbs and spices
wrap the dough up and seal on top
bake on a pizza stone if it fits, or just on the baking sheet for 15ish minutes @ 400 until it looks done.
I edited the amount of flour I needed, I wrote this as it was rising.
