Citrus Chicken Stir Fry
Last night I made a citrus chicken stir fry over oven baked brown rice and I thought it was delicious.
Make brown rice according to the Good Eats recipe for Baked Brown Rice
- ~1 lb Chicken cut into pieces
- 3 TB lime juice
- salt, pepper, garlic
Cook chicken with lime juice and spices until the chicken is mostly cooked.
- 1 onion chopped or something
Add the onion and continue cooking until almost translucent.
- as much broccoli as you see fit, I used home grown from our garden
- Green Peppers, 2, diced, from a friends garden
- Hungarian Wax Pepper, diced, from same garden as green bell peppers
Add the rest of the veggies and stir together
- 3/4 - 1 cup orange juice
- dash of chili powder
- 1-2 tsp corn starch, or flour, or something to thicken it
Add the OJ and the corn starch at the same time so that the starch is mixed into the liquid BEFORE it gets hot, that way it doesn’t lump.
Bring to a boil to thicken the sauce, then serve over the brown rice.
